Black
bean & Corn Salsa
- 1 15oz can black beans (rinsed & drained)
- 1 15oz can sweet whole kernal corn
- 2 tomatoes - chopped
- 1 med. onion (white, yellow or red) - chopped
- 4 cloves garlic (minced)
- 1/4 cup chopped fresh cilantro
- 1 tbsp olive oil
- 1 1/2 tbsp lime juice
- 3 tbsp red wine vinegar
Mix
all ingredients except beans & corn & let soak
for about an hour. Add beans & corn & let simmer
for 45 minutes. Refrigerate left overs.
