Black bean & Corn Salsa

  • 1 15oz can black beans (rinsed & drained)
  • 1 15oz can sweet whole kernal corn
  • 2 tomatoes - chopped
  • 1 med. onion (white, yellow or red) - chopped
  • 4 cloves garlic (minced)
  • 1/4 cup chopped fresh cilantro
  • 1 tbsp olive oil
  • 1 1/2 tbsp lime juice
  • 3 tbsp red wine vinegar

Mix all ingredients except beans & corn & let soak for about an hour. Add beans & corn & let simmer for 45 minutes. Refrigerate left overs.
